Herring "Mathias" are extremely young, mature herring caught and salted during their spawn period in the bay near the town Eherzund from May to July. This fish has time to collect a full set of useful minerals and fat that would benefit the taste at its best. Most shops in Ukraine sell herring from the previous year catch, and only in Egersund Seafood you are guaranteed to get this year herring cought from May to July.

The town of Egersund was established on January 1, 1838. Egersund has one of the best natural harbours in Norway, and used to be the largest harbour in Norway when measured in quantity of fish brought in each year. Here are caught and processed many species of fish, including mackerel, herring, and salmon.
